I just finished a lunch of carrot-raisin salad with yogurt and walnuts, and before you go uhgggg…you have to try it! Here’s an easy to remember recipe:

Shred 1 # of carrots-I had a bag of organic baby carrots that were super sweet!I also use my Salad Shooter-a must have.
Drain 1 can of crushed pineapple (in it’s own juice, of course)
Mix your pineapple and carrots together right away, keeps carrots fresher.
Soak 1/2 cup of raisins in the juice (if you have time)-otherwise, I put them in the bottom of the bowl with about 1/4cup of the drained juice.

To the raisins in the bottom of the bowl, put the carrots and pineapple on top, put a lid on and store in refrigerator for an hour or more. When you’re ready to eat, stir it all up and eat just the way it is, or top with a tablespoon or two of Stoneyfield organic vanilla yogurt and a couple of walnuts. Heaven!

The raisins I bought were the little boxes of organic raisins from Newman’s and came out to a little over $1/bag-that special is over,tho, sorry….Their prices on organic raisins are still pretty good, esp considering they deliver for free. I was happy. Fun to give to the grandkids, too.
